The base of the French pie is a batter of pancakes. First, mix the dry ingredients: sugar, flour and vanilla. Then add milk, cream, 2 eggs and 3 yolks. Leftover proteins should not be thrown away, they can be used to make a great airy meringue!
Instead of cream, you can use high-fat milk plus 30 grams of melted butter.
Mix all the ingredients with a whisk and leave the dough in the refrigerator for 60-90 minutes.

Pour half of the dough into a mold and put in the oven for a few minutes at t = 180o.
