Peanut cookies - a hearty treat for tea and more
If you are not allergic to peanuts, be sure to bake peanut cookies. Delicate, filling, slightly crunchy and just melting in your mouth, it will be a great option for an afternoon snack. Both adults and children will like these cookies. Apart from fiddling with nuts, it cooks quickly enough, and does not require a lot of products.
Ingredients
- peanuts (raw) - 220 g;
- butter - 170 g;
- egg;
- flour - 300 g;
- sugar - 150 g;
- salt - on the tip of a knife;
- ¼ h. L. soda;
- 0.5 tsp baking powder.
From the specified number of products, you will get about three dozen small cookies.
Peanut cookies - step by step
The first step is to prepare the peanuts: fry them in a pan for 5-7 minutes, stirring constantly. Then rub with your hands to loosen the husks. As a result, it will take about 30 g. Now grind the nuts in a blender.
The kids love it when they come across pieces of peanuts in the cookies, so there is no need to bring them to the state of flour. But if you want it to be homogeneous, chop finely.
Now you can start making cookies:
- Beat the butter and sugar with a mixer. If there is no such unit, you can simply rub it with your hands. The main thing is that the oil is soft.
- Introduce the egg while continuing to beat or stir.
- Add chopped peanuts, mix.
- Finally, add flour mixed with baking powder, salt and baking soda.
- Knead a soft dough and divide into balls. To make cookies quickly cook, it is better to make small balls, approximately like Walnut.
- Place the pieces on a baking sheet covered with baking parchment. Press down gently with a spoon or glass to flatten them and make them look like a pancake.
It remains only to put the baking sheet in the oven preheated to 180 °. The cookie will be ready in just 15 minutes. Focus on the edges - they should be browned. Then the cookies on the edge will be crispy, but the middle will remain soft. Do not wait until the whole "pancake" hardens in the oven - this will burn the cookies. When you take out the baking sheet, the middle will still be soft - that's how it should be. As it cools, the cookie will completely harden.
