Cooking a fragrant dessert - pear jam for the winter, a simple recipe in two versions
Pears are one of the most delicious fruits with tender and juicy pulp and sweet honey aroma. But unlike apples, for example, it is very difficult to preserve them for a long time, so it is better to harvest them in the form of sweet desserts. It turns out very tasty pear jam for the winter, a simple recipe for which even beginners in the "canning business" can do. Puree jam will take longer, but only to chop the fruit. But then it turns out an amber dessert with a uniform consistency. And for lovers of whole fruits, you can make jam with pieces of pears, which will give the dish an original look.
Pears for jam - are there any special requirements for the variety
As for whether it is necessary to peel the skin, it all depends on the individual taste. Some people like it when pears with skin crunch a little on their teeth. Others prefer a delicate jam puree made from peeled fruits.
Fully ripe pears boil quickly, but darken slightly during cooking. From hard, semi-ripe fruits, a lighter jam is obtained, but it will take longer to cook.

Such a blank will be delicate, fragrant and beautiful light yellow color. It is better for her to take soft ripe fruits.
Jam puree is prepared in this way:
- Fruits in the amount of 1 kg are cleaned from seeds and passed through a meat grinder. Together with them, sugar is twisted. It needs 2 times more, but in relation to the net weight of pears, which will be obtained after removing the seeds.
- Mashed potatoes are put on fire and heated for 20 minutes, screwing it down to a minimum.
- Then add fire and boil the jam until it thickens (20-30 minutes).
- At the end, add 0.5 tsp. citric acid, boil for a couple of minutes and immediately poured into jars and sealed.
Instead of citric acid, you can add freshly squeezed lemon juice. For the specified amount of ingredients, 2-3 tbsp is enough. l.
Pear jam with fruit pieces
Dessert is suitable for those who do not like very sweet jams, because sugar is needed for it 2 times less than for a homogeneous preparation. But it will take a little more time. You need to wait for the fruit to start juice, and boil them even longer to get a thick dish.
Of the ingredients, you only need pears and sugar in a 1: 1 ratio. Making such a jam is also easy:
- the fruits are cleaned of seeds, and if desired, from the skin;
- cut into slices;
- sprinkle with sugar;
- leave for a couple of hours to release the juice so that it covers the pieces;
- then boil until the jam begins to drain from the spoon in a viscous stream.
If the fruits are not very juicy and give little juice, you can add 100 ml of water before sending them to the stove.
