For 4 servings of Idaho potatoes, prepare:
- potatoes - about 1 kg;
- tomato paste (sweet ketchup can be used) - half a glass;
- classic or French mustard - 1 tbsp. l;
- chopped garlic - 3 small cloves;
- spices (red pepper or paprika, dried herbs) - 30 gr.;
- olive oil or sunflower oil (refined) - 100 ml;
- fresh dill - optional;
- salt to taste.
Cooking sequence:
- First you need to take the potatoes and wash them thoroughly. Optionally, you can peel the tubers from the skin (in the original American recipe, the potatoes are taken unpeeled).
- Then the washed potatoes must be cut into several pieces so that you get boats.
- Place the chopped vegetable into a saucepan. After that, pour water into the container so that it covers the completely cut slices. We put the pan on the hob. When the water boils, the potatoes need to be blanched for about 3 minutes.
- Then drain the hot water. We remove the excess liquid from the potatoes by pouring the slices into a colander.
- Now let's start making the dressing sauce. Add finely chopped fresh dill to olive or sunflower oil.
- Then we mix the mixture with ketchup, mustard, spices and salt.
- Last of all, add garlic skipped through a garlic or finely chopped by hand garlic to the dressing.
