The use of barberry in cooking - delicious and healthy berries and not only
Lush barberry bushes with a dense crown, green in spring and yellow - red in summer, create an impenetrable hedge. It will not only reliably protect you from unwanted guests, but will also delight you with a tasty and healthy harvest. In addition to the healing properties of culture, the use of barberry in cooking has long been practiced. Sour berries will add a spicy touch to many dishes and color the drinks in a beautiful color.
The use of barberry in cooking
The main thing is not to get carried away with barberry, because excessive consumption of berries can cause vomiting. In addition, in large quantities, they greatly lower blood pressure, so hypotensive patients should be especially careful. And one more thing: only ripe berries, painted in a rich red color, are beneficial. Green fruits are poisonous, you cannot eat or add them to dishes.
What can you do with leaves
If you try young leaves, you can clearly feel their sour taste, almost the same as that of sorrel. Barberry foliage can easily replace sorrel when cooking cabbage soup or green borscht. They are also good in vegetable salads. Alternatively, the leaves can be marinated.
How to use berries
Most often, it is the fruits of the bush that are still used in cooking. They can be added to almost any dish, for example:
- Pilaf.
- Rice porridge.
- Minced meat for cutlets, sausages and other meat products.
- Stuff the poultry for baking.
- Soup, especially pea soup, or a separate soup with beef and barberry.
- Sauce.
- Adjiku.
- Alcoholic drinks (liqueurs, liqueurs, beer).
- Various desserts.
Barberry berries behave well when canning. They can be harvested separately or added to sauerkraut and cucumbers. Delicious and healthy juice or compote is obtained from the fruit. And also aromatic and vitamin jam is made from it. The berries should be pre-soaked overnight, and the next day the syrup should be boiled in this water. Then pour barberry over them and boil for 40 minutes. For 1 kg of berries, you will need 1.5 kg of sugar and 600 ml of water.
