Simple and incredibly delicious curd and cherry pie
A fragrant, beautiful and incredibly juicy pie with cottage cheese and cherries will surely delight you and your loved ones. Delicate shortbread dough combined with juicy curd and cherry filling will not leave anyone indifferent. This is not only tasty and simple, but also a quick pie with cherry, which will certainly go into the treasury of your favorite recipes.
What is needed for the cake
The dough will require:
- butter - 150 gr.;
- sugar - 100 gr.;
- egg 1-2 pcs. (depends on the size);
- salt - 0.5 tsp;
- flour - approximately 250-300 gr.;
- zest of half a lemon - optional.
For the filling you will need to take:
- milk - 500 ml;
- semolina - 100 gr.;
- egg - 4 things.;
- cottage cheese - 500 gr.;
- sugar - 250 gr.;
- cherry - 300 gr.;
- baking powder - 5 tsp;
- nut - 50-100 gr.
Step-by-step recipe for making a pie with cottage cheese and cherries
Let's figure out what, why and how to do it.
Three frozen butter on a grater or cut with a knife. We add flour, gradually pouring it through a sieve, this will help enrich our future dough with oxygen.
Add eggs to the resulting mass.
Add sugar, salt and, if desired, lemon zest.
Knead the dough well so that it does not stick to your hands. Wrap the finished dough in plastic wrap and put it in the refrigerator for several hours.
While the dough cools down, let's prepare the filling for the cherry cheese pie. To do this, pour milk into a metal container and wait for it to boil.
Pour semolina into the boiled milk. Bring it to a boil again and turn off the gas.
Now you need to separate the yolks and whites of the eggs.
Beat 4 squirrels with a mixer, adding a pinch of salt and 3-5 drops of lemon juice. The juice is not required, but it will add a slight sourness to the taste. If you are not a fan of the lemon flavor, you can completely do without juice. Beat until a thick, homogeneous and strong foam is formed.
Add 3 yolks to our cottage cheese, pour the baking powder there and mix thoroughly.
Pour all the sugar into the cooled semolina porridge and mix well.
Mix semolina porridge with cottage cheese, and then gently add the whipped proteins. Stir gently, lifting the filling from the bottom, making it homogeneous.
Now you need to turn on and heat the oven to 2000 C. Prepare the mold by greasing it with butter. We have a mold with a diameter of 28 cm.
We roll out the dough, making sure to make allowances for the sides.
Put the finished form in the oven and bake until even golden brown.
The readiness of the test can be checked with a toothpick.
While our base is baking, let's start preparing the filling for the cottage cheese and cherry pie. For this 300 gr. cherries need to be washed, remove excess moisture with napkins or paper towels. Remove seeds from dried berries and squeeze out excess juice. The less juice you have, the tastier the filling will be.
Put the prepared cherries on the cooled dough in an even layer.
Next, pour out our curd-semolina mixture to the very top of the mold.
Now it's time to remember about the previously delayed yolk, add a little milk to it (you can replace it with boiled water) and beat it well.
We spread the mixture on our cake.
We decorate our pie with nuts. To do this, you need to fry them a little in a pan, finely chop or grate and sprinkle on the pie.
